We have invited four amazingly talented chefs from around Dublin, to come and cook with us here at La Cocina Cuevas HQ this summer. These chefs will be cooking a 6 course set menu along side Chef Jeremy. Each menu is a unique collaboration.

Chris Maguire is well known in the Dublin food scene and has made his mark here in the past few years. He has headed up some of the best restaurants in the city, including Delahunt, Franks and Locks restaurant. A Dublin native, Chris has traveled the world and has lived abroad for a good part of his life. His formative years were spent living in Canada, where he began his cooking career. Starting out in a Huge kitchen operation, he cut his teeth at Montanas, working his way up to kitchen manager whilst still only 17. From there he decided to head home to Ireland and enrolled at DIT to study Culinary arts. Chris got his first taste of the fine-dining scene when he entered the kitchen at Chapter One, followed by plenty of time spent in the Pigs ear Kitchen. This inspired him to take his learning to the next level and he moved back to Canada to work in one of North Americas best Restaurants, West. Next he made his move to London and began work with some of the worlds top chefs.
Whilst in London Chris grafted at the famous Diner by Heston for a time. Before ending up at Trinity Restaurant in Clapham. When Trinity closed for several months, for refurbishments, Chris was placed at The Ledbury and The Square to learn from two of the worlds best kitchens. Here he honed his skills and returned to Trinity. Chris rapidly rose through the ranks at Trinity and was a large part of their Michelin Star award in 2016. After a good few years in London, Chris decided that he was ready to move home to further his career in the burgeoning Dublin food scene.
Back in Dublin, Chris took the Helm at Locks restaurant and made a big splash, receiving a 9/10 from every paper In town. He was then offered a new challenge. A new opening with himself as a solo chef. One of the first of its kind, Franks opened to great reviews and crowds of people. This eventually led him to Franks sister restaurant and Dublin institution, Delahunt. Chris spent a few years here building a great menu and reputation in Dublin. Chris is always on the look out for new challenges and opportunities, recently this has lead him to the helm of the kitchen at Spitalfields. Where he continues to grow and inspire chefs around the capital and abroad.
Chris met Jeremy in 2015, when he started at Trinity. Eventually Jeremy was promoted to head chef at Trinity’s sister restaurant Bistro Union. It was during this time that they first became friends. Chris was in charge at Trinity and Jeremy In charge at Bistro the two would often get together to discuss life, business, food and ideas. This connection only grew stronger when they both ended up in Dublin. Jeremy worked alongside Chris at Locks while setting up La Cocina Cuevas in his free time. Chris and Jeremy have been huge supporters of each other in life and business. Jeremys first LCC pop up at Franks was organised by Chris. Since then the two have begun a small farming project that aims to teach ourselves and our community the value of growing some of your own produce. To gain a deeper understanding and knowledge of the foods we eat and serve. Many of the dishes they will cook together on this menu will come directly from their farming project. Their passion, knowledge and friendship are certain to shine through in the food and service of this special collaboration.
