Theres something wonderful about been able to cook what you love at home and add your own twist to it to make it yours.
Ingredients: Paprika, Oregano, sea salt, onion powder, garlic powder, chili powder (cayenne), black pepper, cumin.
'Spice rub' - This is a great standard practice with dry spice especially if you are grilling, this is great on chicken or vegetables.
TIP: Depending on the cut or type, it can be good to pat dry the protein to remove all the moisture but sometimes a little oil massage in so the spice can stick is the secret.
The best thing about spices if how adaptable they can be, its one of those very important point that if your main protein is tasty everything will follow.

As the Irish counter part to La Cocina Cuevas, I love when my partner Jeremy uses this mix in a shepherd's pie. That lovely spice coming through with potatoes and fresh peas, it is a hearty dinner I dream.
But if I want to feel on holidays then in tacos it is a perfect mix!
Add our vile of OG spice to 500g of mince beef,
with 1 tbsp of veg oil,
50ml of water
& 1 tsp of salt in a medium sized pot.
Cook stirring frequently over medium heat until mince is fully cooked and water is reduced to a thick sauce on the mince beef.
Now your spiced mince beef is ready for your imagination to run wild and spice up your Irish meals or if you want to feel like you are dinning with us pop your mix into some tacos or burritos!
