We have invited four amazingly talented chefs from around Dublin, to come and cook with us here at La Cocina Cuevas HQ this summer. These chefs will be cooking a 6 course set menu along side Chef Jeremy. Each menu is a unique collaboration.
Let us introduce you to them. Firstly we have.......
Vegetarian menu is available on request, but unfortunately we will not be able to cater for a vegan menu.
Eanna is a native of Ireland, hailing from Kildare. He has been on the Dublin food scene for some time now, if you don’t know his name by now you would definitely know him by his food. He started his career under the toutelage of Richard Corrigan at Bentleys on the Green and the Cliff at Lyons back in the day. He then headed off to the UK for culinary school where he and Jeremy met, and fell in love. After completing his study, he went on to work for Andy McFadden at L’Autre Pied before moving onto the expertise of Bryn Williams at Odette’s in Primrose Hill, London. From there Éanna went on to work for James Knappett at Kitchen table where he was part of the small team that earned the restaurant its first Michelin star. After 5 years of graft in London, Eanna decided to take on a new adventure in Australia where he swapped the hot kitchen for the pastry department learning the meticulous details involved in vienoisserie at Lune Croissanterie, arguably the best croissant in the world.
Returning to Ireland, Éanna went to work with the much loved Ciaran Sweeney at Forest and Marcy before returning to education and earning a first class degree in Biomedical Scoence from Trinity Collage, Dublin. After completing his degree the lure of kitchens proved too much and Éanna returned to kitchens full time working with Essa Fahkry in Note, as a baker in the much loved Fumbally café. Finally, Éanna has manned the helm in the Bar Pez Kitchen since its opening, where he has made a splash in the Dublin food scene once again. In typical fashion, Éanna will undertake another move this autumn to complete a Masters in Human Nutrition at Columbia University in New York City. The man has ants in his pants.
Eanna and Jeremy met in January of 2011 at Culinary school. They attended the Tante Marie school of cookery in Woking, Surrey, UK. Both top students in their class, they had a healthy rivalry and a strong friendship from the start. The two spent many nights practicing their dishes together after school, as well as a fair few nights in the Pub making some fuzzy memories and having some good craic. They kept in touch frequently when they both lived in London, visiting each others kitchens and comparing notes. They continued this friendship when Jeremy moved to north Dublin and Eanna returned home from Oz. Finally the two will be back in the kitchen together this July, dishing up some really fun, inspiring food.
